How do I convert plain text files into ONE BIG FILE?

Hi,

I have about 2,000 PDFs that Calibre will convert to individual plain text files.

Then...what I want to do is take about 100 at a time and create one big text file from it. This one file will then be uploaded into an AI app for a project.

Please give me the steps to merge these text files.
